Recipe: Quick and Easy Green Salsa Pork Tacos

This is a very easy recipe for green salsa pork tacos. Although it isn't the most gourmet of meals, it's perfect for days when you're going to be out running errands or have limited time to cook dinner. Plus, the entire family loves it, even the kids because it's not too hot.

Here's what you'll need:
  • Crock pot
  • Boneless pork loin
  • Salt & Pepper
  • Garlic
  • Onion
  • Jar of Green Salsa
  • Tortillas or taco shells
  • All of your favorite taco toppings

Here's what you do:
1. Place your pork loin in the crock pot with a little water or beef broth. Season the pork loin with salt and pepper to taste. Chop up some onion and garlic to throw on top, then pour on enough green salsa to cover the top of the pork loin. Turn on the crock pot and cook until it shreds easily with a fork.

2. When the pork loin can be easily shredded with a fork, remove the pork loin and shred it. Remove any of the liquid from the crock pot. Once shredded, place back into the crock pot, pour in a little more salsa, depending on how hot you want your tacos.

3. Cook on low for about another 30 minutes. Stir periodically.

Then simply make your tacos with all of your favorite toppings.

I really love this recipe because it not only tastes good and the family loves it, but prep and actual cook time is very minimal. These quick and easy green salsa pork tacos are perfect for those days you just don't feel like cooking, or busy days you have no time to cook.
